You can so cook!

So here is my youngest kiddo, who has always claimed to not be able to cook, and has actually proven it on some occassions… BUT, she made a GREAT dinner for me before heading back to school. Not only was it great, but on the fly, she had to adjust it for my Atkins diet world, and it couldn’t have been better! Dinner was a stuffed green pepper accompanied by a vegetable curry soup.

The pepper was stuffed with ground beef, a bit of salsa, onion, hot banana peppers, and topped with a shredded Cajun cheese blend that I had never seen before. Plate decorated with hot sauce and a couple of jalapeno pepper rings.  It was so good! Will be adding to the Atkins repertoire for sure! And the soup! From scratch and also low carb, a blend of celery, onion, (one) carrot, cauliflower, chicken broth a dash of cream and curry, then blended after cooking. She did change the original recipe slightly, but still excellent, kind of a pea soup consistency, and so many ways to change it when carbs are back on the planet. (L will try the leftover soup when he is back from vacation.) So it would have been wonderful if it ended there… but… she also cleaned up! Life’s Good!

We have been at the workout, cut back on food game, since returning from the Triple D adventure… and the weight hasn’t budged much, so we have embarked on Atkins since Monday. We follow it fairly well, but still include a vodka/soda cocktail or glass of wine or two. Here was the inaugural dinner of the day: fresh ground lamb burger from my favourite local butcher shop, loaded with Moroccan spice mix from Epicure and fresh garlic, topped with tomato, onion, tzatziki, fresh, crumbly blue cheese and for fun, sprinkled with a bit of ground beef crumble.  What a delicious way to go! We have both lost 4 pounds each so far, and have continued to eat well and workout. Full speed ahead, Cajun blackened salmon for dinner tonight. Try the recipe in the link for yourself!

Your new favourite treat!

At this point, I feel that I have perfected the creation of the banana batidos, just like we had at the Valencia Luncheria. Simple, delicious, good for you….. I’m going to tell you how to make them for yourself, but don’t be fooled by the lack of complicated ingredients, they create a glass of banana love! (of course you should like bananas to appreciate this, otherwise just skip the rest of this post… unless you know a banana lover, and then read on… and then surprise them with one!) Okay here goes:

5 ice cubes (mine are from fridge ice maker, if using ice cubes from tray, maybe 4, you’ll figure it out!)

1 medium banana with some brown spotting on it (I have not tried with a completely yellow banana, but again, your tastes may be different)  I’m sure you could add some different fruit if you want, but I would keep the banana, it is probably what makes the consistency so smooth and milkshake like.

4 oz if whole milk (give or take)

I throw it all in the blender and just keep it blending on high until it is very smooth.  That’s it! Pour in a glass and enjoy, you will be surprised at how totally delicious it is.
